Choosing the right type of chocolates for the occasion: A connoisseur of chocolate would know that there is quite a variety to make the recipient appreciate your fine tastes and gesture. Unsweetened or Baking Chocolate: This is actually chocolate liquor (non-alcoholic) that has been cooled and hardened. It is obtained by a process of pressing the cocoa bean. This is chocolate in its most basic form. German Chocolate: a special variety that is distinctive for its taste. Dark or Bittersweet Chocolate: a very popular choice, this variety must contain a minimum of 34 percent cacao/cocoa solids, which gives it that quaint bitterness. The more cocoa solids the chocolate has the more you will enjoy them. Semi-sweet Chocolate: This variety is made by adding more cocoa butter to the mixture and less sugar than usual. Milk chocolate: the most popular variety, a blend of cocoa butter, sugar, milk, and vanilla. Cocoa: Chocolates are traditionally made using cocoa liquor from which cocoa butter is removed. If the cocoa butter is removed and replaced with vegetable oil, the result cannot be defined as an authentic chocolate. Dutch Process Cocoa: Cocoa powder cannot be used unless the natural acids present in it are neutralized. White chocolate: Normally chocolates are made with cocoa and cocoa butter. White chocolates are an exception as they are made using cocoa butter and no cocoa. It would contain sugar, milk and flavorings like chocolate but still it cannot be called chocolate. They are known as vanilla chips. Decorator's or confectioner's chocolate: This isn’t really chocolate. It is a chocolate flavored candy often used in liquid form to dip fruit in or pour over a bowl of fruit-based dessert dish.
